We harvest only when the comb is capped and the honey has fully ripened — never earlier, however tempting the yield.

Notice
From which regions does the honey come?
Our hives travel with the blossom. Across Bali and into East Java they follow the flowering season — calliandra in the highlands, acacia and cashew on the dry slopes, mango and wildflower in the valleys.
This is why a jar of Bali Honey is never quite identical to the last. The nectar changes with the season, and we would rather tell you that than blend it away.
